品飲筆記:色澤淡金,氣泡細緻持久。初聞有脆甜的青蘋果、黃梨與白醋栗,帶一點核果的成熟甜香,尾段顯示礦質與石頭般的鹹感,整體清爽而聚焦。 酒莊故事:米庫斯基酒莊由François與Marie‑Pierre Mikulski經營,家族式經營注重手工與細節,從田間到酒窖都保持低干預與嚴格挑選,傳統工法造就穩定的品質。 釀造概述:採傳統瓶內二次發酵(Méthode Traditionnelle)。人工採收、以小型有孔籮分級裝運,整串壓榨以分離頭、中、尾汁,原汁在不鏽鋼槽發酵並自然沉澱。瓶中熟成至少12個月,藉由轉瓶集中沉澱後脫塞,按需要補加少量甜化酒液再塞瓶。整體不入桶,保留鮮明酸度與礦物感。 葡萄園與風土:來自涼爽的勃根地產區,土壤礦物感明顯,海拔與朝向帶來良好酸度與清晰果味。人工採收與小批量處理讓酒體乾淨、口感層次分明。 口感建議:入口有細緻泡沫與膩度平衡的奶油感,中段的礦感與清新酸度帶出整體結構,非常適合搭配海鮮或清爽的開胃菜。建議冰鎮飲用,不需醒酒。

Tasting note: Pale gold with a fine, persistent mousse. Aromas open to crunchy orchard fruits—apple and yellow pear—alongside white currant and a hint of stone-fruit. The palate is sleek and precise, offering a creamy mid-palate and a minerally, stony salinity that carries through a long, focused finish. Producer notes: Domaine François Mikulski is a family-run domaine led by François and Marie‑Pierre Mikulski. The domaine blends Burgundian tradition with meticulous hands-on work in the vineyard and cellar, favouring careful selection at harvest and classical bottle fermentation. Winemaking notes: Made by the Traditional Method. Grapes are hand-harvested into small perforated crates and whole-bunch pressed to keep cuvée and taille separate. Juice ferments in stainless steel tanks and, after blending, the base wines are bottled with yeast and sugar for secondary fermentation in bottle. Bottles age on lees for at least 12 months at controlled temperatures, are riddled (gyropallets) and disgorged before final dosage and corking. The style is unoaked and Brut, preserving freshness and tensile minerality. Vineyard notes: Sourced from Burgundian sites with cool-climate influence and mineral soils that lend tension and stony character. Hand harvest and small-lot handling emphasize purity, freshness and precision on the palate. Service: Serve well chilled. No decanting; enjoy with seafood and lighter, textural dishes.

The team favours precision, low intervention and ageing on fine lees to develop texture and complexity without oak.
