2022 Domaine Jean Sebastien Dauvissat Chablis 1er Cru Montmains
Bright and focused, this Montmains Premier Cru opens with lifted aromas of lemon zest, green apple and white blossom, threaded with wet stone and flinty notes. On the palate it is taut and refreshing: piercing acidity frames concentrated citrus and saline mineral layers, while a fine lees texture adds depth without weight. The finish is long, precise and gently stony, offering excellent tension and ageing potential. Producer notes: from the family domaine Jean et Sebastien Dauvissat, the wine reflects low-yield, attentive vineyard work and careful cellar handling. Winemaking: fermented in stainless steel and large neutral vessels with extended lees contact, minimal oak influence and restrained malolactic activity to preserve freshness. Vineyard: parcels on Kimmeridgian limestone soils in the Montmains Premier Cru deliver that signature Chablis minerality—cool-climate ripeness, fossil-rich clay-limestone and a maritime edge.
