Tasting note

來自義大利最負盛名的Cannubi名園,2018年需靠細緻的田間管理才能取得理想成熟度,手工採收(10月8日)後以55hl橡木槽低溫發酵約20天,完成桶內乳酸發酵,並至少於木桶中熟成約兩年,再入瓶陳年。杯中散發濃郁的紅果、甘草與甜煙香,口感飽滿且有層次:酸度明亮、單寧如絲般包覆,帶出豐厚的中段與持久餘韻;來自含砂與鈣質泥灰岩的地質賦予礦感與微量金屬的香氣,令整體更清爽有張力。建議醒酒一小時以上,搭配燒烤紅肉或野味最合適,亦適合中長期陳放。

From one of Italy’s most celebrated hills, this 2018 shows an aristocratic nose of concentrated red fruit, liquorice and sweet tobacco. The 2018 growing season demanded careful canopy work; hand-harvested fruit arrived healthy and fully ripe on 8 October. Fermentation lasted about 20 days in 55hl oak vats with a gentle cap-wetting system, followed by malolactic in vat and a minimum of three years ageing — typically two years in average-sized oak casks before bottle refinement. On the palate it is enveloping and rich: silky, well-structured tannins support a generous mid-palate and bright, persistent acidity. Mineral lift from the Tortonian and Helvetian calcareous marl adds tension and an iron-tinged savoriness that frames a very long finish. Drink now after a good decant or cellar to 2044.
