Tasting note: Bright and expressive, this Adelaide Hills bottling opens with citrus zest, lime and green apple, layered with tropical lift and delicate white florals. On the palate it shows lively acidity, a rounded mid-palate with subtle beeswax and stone-fruit notes, finishing clean with a saline, lingering tail. Producer notes: Crafted by Two Hands Wines under Ben Perkins’ guidance, Adrestia is a focused release that showcases fruit sourced from cooler, elevated sites in the Adelaide Hills. The team aims for precision and texture, capturing freshness and varietal personality while allowing gentle bottle evolution. Winemaking notes: Fruit was picked for acidity and freshness, handled gently with cool fermentation to preserve aromatics. A portion saw extended lees contact and careful maturation in neutral vessels to build palate weight and a subtly rounded mouthfeel without overwriting the natural brightness. Vineyard notes: Sourced from selected hillside blocks in the Adelaide Hills where cool nights and moderate daytime warmth give clean fruit and vibrant acidity. Soils are typically well-drained loams with depth, promoting balanced ripening and expressive aromatics. Hand-harvest and attentive viticulture ensure healthy fruit and minimal intervention in the cellar.
