品飲筆記:酒液呈深寶石紅,香氣先是花香與藍莓、黑櫻桃與李子的深邃果核,隨後出現甘草、百里香與溫暖香料的層次。入喉中段帶有緊緻但細緻的單寧,口感絲滑且有一點咀嚼感,酸度平衡整體,使香料與草本味延展到尾段,收結細緻而持久。
釀造與生產:由瓦利酒莊以本迪戈園的果實精心釀造。部分葡萄以高比例完整果梗發酵(約58%),提升結構與香氣複雜度;在法國橡木桶中熟成約12個月(新桶約30%),操作溫和以保留果香與口感細膩度,酒精度14%。
葡萄園與風土:果來源自本迪戈的梯田地塊(包含 Chinaman's Terrace),日夜溫差大、曝曬充足且產量受控,造就濃縮卻仍帶清爽酸度的果實。風土讓酒款在濃郁與優雅間取得平衡,既有力量也有地域感。
搭配建議:烤鴨、香草羊排、帶脂肪的牛排或松露燉飯都很合拍。飲用建議醒酒約一小時,放著再陳一陣子口味會更圓潤。
Tasting note: Deep ruby with lifted floral perfume leading into a concentrated core of black cherry, plum and blueberry, edged by liquorice, thyme and warm spices. Medium–full on the palate with tightly knit, fine-grained tannins that coat the mouth in a silky, slightly chewy texture. Fresh acidity keeps the wine poised while savory herbaceous notes lengthen a refined finish.
Producer & winemaking: Crafted by Valli Wines from Bendigo fruit, a portion of the fruit was fermented with a high percentage of whole bunches (c.58%) to add structure and perfume. Matured for 12 months in French oak barrels (around 30% new) with gentle extraction to preserve aromatics and texture. Alcohol sits at 14% and the wine shows both power and finesse.
Vineyard notes: Sourced from Chinaman's Terrace and other Bendigo sites in Central Otago — cool nights and strong diurnal swings help retain natural acidity while concentrating flavor in low-yielding, well-exposed terraced blocks. The result is a site-expressive wine with focused fruit and savory complexity.
Service: Decant for about 60 minutes if enjoying now. Cellaring potential through the 2020s as structure and spice integrate further.
