Valli is a boutique Gibbston producer focused on small-lot, site-driven wines. Fruit is managed with low yields and hand-harvested where possible; fermentation is carried out in small batches with gentle extraction and maturation in a mix of seasoned and some new French oak to preserve bright fruit and add gentle texture.
