Tasting note
品嚐筆記:酒體深沉,黑果香鮮明,有黑莓、黑加侖與熟李子的濃郁果實感,伴隨雪松、煙草與礦石氣息,空氣接觸後出現巧克力與香料的暖調。入口飽滿,酸度挺拔,單寧成熟而有抓力,收尾長且綿密。
酒莊與生產:傲雲由頂級集團投資,2014 年由釀酒師親自掌舵,專注把高山「香格里拉」獨特風土轉化為瓶中風味。葡萄園位於2200–2600米的高海拔坡地,世代居民以人手細心管理陡坡,尊重傳統耕作。
釀造與陳年:整串人工採收,為了補償稀薄空氣影響,發酵與浸皮時增加曝氣並延長浸皮期,部分乳酸發酵在新木桶與透氧陶罐中完成,使用較低的二氧化硫,最後以橡木桶陳年約14個月,讓結構更圓潤但保留新鮮感。
口感小提醒:質地豐厚但不悶,咬感與尾韻兼具力量與優雅,適合先醒一小時至九十分鐘再細細品味。
Tasting note: Deep ruby with a concentrated core, this wine opens on layered black fruits — blackberry, blackcurrant and plum — framed by cedar, tobacco and subtle graphite. Dark chocolate and warm spice emerge with aeration while an underlying mineral thread and fresh acidity lift the profile. The palate is full-bodied and structured, showing ripe, polished tannins and a long, silky finish.
Producer notes: Crafted by Ao Yun under Moët Hennessy, with Maxence Dulou overseeing the 2014 vintage. The project focuses on expressing the remote Shangri‑La terroir at very high altitude, combining traditional local knowledge with international winemaking expertise.
Winemaking notes: Hand-harvested in mid-September to late October from selected high-elevation parcels. Winemaking adapts to the thin mountain air with increased aeration during maceration, extended maceration times tailored by parcel and vintage, partial malolactic fermentation in new oak and oxygen‑permeable earthen jars, and lower sulphur use. Aged 14 months in oak, the result is a wine that balances ripe extraction with freshness and restraint.
Vineyard notes: Sourced from 314 plots totaling nearly 28 hectares at 2,200–2,600 meters elevation. Steep slopes tended by local farmers for generations, cool diurnal shifts and well‑drained soils give the wine its defined acidity, mineral lift and aromatic clarity. Manual vineyard work and harvest preserve fruit integrity and terroir expression.
