Tasting note

2015 年的卡農呈現深邃的緋紅色,香氣以紅醋栗與覆盆子為主,逐步轉為香料與微妙礦物調。入口精準、活力十足,單寧細緻如絲,口感圓潤帶有豐厚的油潤感(unctuous),尾韻綿延。酒莊在田間採取地塊分級管理,人工篩選果實,酒窖以重力流作業減少粗暴碰撞,發酵與熟成都走溫和路線:在法國橡木桶中熟成約 18 個月,讓香草與辛香料完美融入而不搶走果味。田地為典型聖艾美濃的石灰黏土坡,帶來清晰的礦物感與結構。喝法上可醒酒一至二小時,配羊肉、烤牛排或風乾類紅肉都很合拍,想收藏也很安心。

2015 Château Canon shows an intense crimson colour and an elegant, fresh nose of red currant and raspberry that drifts into spicy, savoury notes. On the palate it is precise and vibrant, with fine, silky tannins and a plush, unctuous texture—evidence of ripe, measured extraction. The wine was crafted with meticulous plot-by-plot vineyard work, manual sorting and a gravity-flow cellar to protect fruit integrity. Fermentation and élevage were handled gently; the final blend matured approximately 18 months in French oak, adding subtle spice and length. The terroir of Canon’s well-drained limestone/clay slopes lends mineral lift and a refined backbone. Ready to enjoy with decanting now, it also offers long-term cellaring potential.
