品飲筆記:愛詩圖爾 2012 展現聖艾斯泰夫的經典輪廓——黑莓與黑醋栗的深沉果香,伴隨礦石與石墨的冷冽氣息,還有甘草、香料與黑巧克力的細膩層次。口感飽滿而集中,單寧有力但打磨得細緻,酸度支撐整體結構,尾韻長且帶鹹香感。 酒莊與產區:酒莊在現任人主下大量投入現代化釀造設備,同時重視田間管理,力求在風土與品質間取得平衡。酒莊的礫石與黏土土壤、臨海微氣候,賦予酒款礦感與穩健骨架。 釀造手法:自田間嚴格分選,採用溫和浸皮與精準萃取以維持果香與新鮮度,經橡木桶熟成以增添香料與質感,最後以軟木塞瓶裝,適合陳年收藏。 品飲建議:建議醒酒約1小時至1.5小時再享用,搭配烤肉或成熟硬質起司最對味。這是一支兼具力量與優雅的收藏型波爾多。

Tasting note: A classic Saint-Estèphe expression from Cos d’Estournel with concentrated black fruits—blackberry, blackcurrant and cassis—layered with graphite, crushed stone minerality and anise/licorice spice. Toasted oak brings cocoa, vanilla and espresso notes. On the palate the wine is medium‑full to full-bodied with a dense, polished texture, firm yet integrated tannins and a long, savory finish. Producer notes: Cos d’Estournel describes the Grand Vin as demure yet sensuous, a wine that unfolds slowly into exotic spice, fruit and mineral impressions. Under Michel Reybier’s ownership the estate has blended tradition with modern investment to elevate quality across vineyard and cellar. Winemaking notes: Harvested and sorted with precision, the wine received careful extraction to preserve freshness and texture, followed by élevage in oak (oaked maturation) to add spice and structure while respecting fruit purity. Bottled with a cork closure and intended for long ageing. Vineyard notes: Planted on the gravelly, clay-influenced terroirs of Saint-Estèphe with maritime influence, the estate’s soils lend power, tannic backbone and mineral drive. Cooler nights help retain acidity and aromatic lift, resulting in a wine built to age gracefully. Cellaring & drinking: Ready to benefit from decanting (60–90 minutes) now but will continue to evolve for many years. Best drinking window spans mature drinking over the coming decade-plus.
