品飲筆記:這支來自夏山夢雪「馬素」一級田的白酒,前段以白花和檸檬皮輕盈招呼,接著展現熟梨與黃肉石果的圓潤果感。橡木陳年帶出烤杏仁與奶油香,但整體仍以清新的礦感和明亮酸度為主導。口感豐滿帶有細緻乳脂感,細膩的鹽感與堅果尾韻收束悠長。
酒莊與釀造:彼洛特為家族小莊,注重讓田地表現出來,釀酒上採法國橡木桶發酵與陳放,使用部分新桶以建立骨架,並在瓶前以蛋白酶般的細緻舊法在澱粉上攪動( bâtonnage),提升酒體圓潤度而不掩蓋清新果酸。
葡萄園:馬素一級田多為石灰質與黏土混合土壤,坡向利於成熟但保有張力;莊園控制低產、人工採收,以取得集中且有場址特徵的果實。

Tasting Note: Bright, polished and layered—this Premier Cru from Morgeot opens with white-flower and lemon-zest aromas, followed by ripe pear and yellow stone fruit. Gentle toast, toasted almond and a whisper of vanilla come from careful oak élevage. The palate is medium-plus, creamy from lees ageing yet kept lively by fresh, chalky minerality and zesty acidity. The finish is persistent, with saline citrus and nutty echoes.
Producer Notes: Fernand & Laurent Pillot is a small family domaine in Chassagne-Montrachet known for balanced, terroir-driven whites. Their approach blends traditional Burgundian technique with measured use of oak to preserve purity and finesse.
Winemaking: Fermented and aged in French oak barrels with a portion of new oak for structure, this wine sees extended élevage on fine lees with periodic bâtonnage to build texture. Malolactic fermentation is handled to soften edges while retaining vibrancy.
Vineyard: Morgeot’s Premier Cru parcels sit on classic Côte de Beaune limestone-clay soils, often with southeast exposure that brings ripe fruit while maintaining tension. Low yields and meticulous hand-harvest ensure concentration and a clear expression of site.
