Penfolds’ Bin 707 is the house’s concentrated powerhouse: inky, intensely layered and built for the long haul. The 2016 shows a brooding bouquet of blackcurrant and black mulberry underlaid by savory, meaty notes (black pudding, sweetbreads, marrow) and a distinct marine-iodine edge—nori and oyster sauce—alongside new American oak aromas of vanilla, cigar-box and mocha. On the palate it is expansive yet refined: dense, silky-textured fruit cushioned by firm but svelte tannins, with oak fully integrated after 20 months in new American oak hogsheads. Fruit was selected from Coonawarra, McLaren Vale, Barossa Valley and Adelaide Hills, a vintage marked by warm ripening and low rainfall that concentrated flavours. This is a wine built for cellaring — rewarding patience with deep, layered complexity and a long, resonant finish.
