2023 Domaine Fernand & Laurent Pillot Chassagne Montrachet 1er Cru 'Vide Bourse'

Soul Hook: Premier‑Cru poise—buttery texture and mineral precision that rewards patience.

Why choose it? (Feature -> Benefit):
- Premier Cru terroir -> Gains complexity and depth with short cellar time, giving you a serious bottle for special dinners.
- Classic Burgundian élevage (oak ageing and lees work) -> Creamy, layered mouthfeel without losing freshness.
- Small, focused domaine production -> Real terroir expression at a fraction of big-name prices.

Winery & Vineyard Notes:
From the respected family domaine Fernand & Laurent Pillot, this Vide Bourse Premier Cru comes from well‑situated parcels in Chassagne‑Montrachet where limestone soils and careful canopy work produce concentrated, textured fruit. The domaine favours traditional, hands‑on viticulture and selective yields to preserve balance and clarity.

Winemaking Notes:
Fermentation and élevage in a mix of new and seasoned oak barrels with malolactic conversion and periodic lees stirring create a rounded, opulent texture. The 2023 shows an initial thread of reduction on the nose—typical of very young wines from this producer—that softens with air to reveal toasted spice and citrus overlaying ripe stone fruit.

Tasting Note (sommelier’s take):
On the palate it’s medium‑to‑full with a plush mid‑palate, salted citrus lift and a chalky mineral spine. Toasted oak and subtle creaminess sit beneath a tight, well‑balanced finish. Approachable now with 45 minutes of decant; best evolution 2027–2043 as it integrates further.

Occasion / Pairing Guide:
Serve slightly chilled after a short decant at intimate dinner parties—pairs brilliantly with smoked eel or a buttered roast chicken, and stands up to rich fish gratins or aged Gruyère.

Competitive Edge:
Compared to big‑name bottles, this offers focused Premier‑Cru personality and barrel complexity with strong value — terroir and texture without the headline markup.

Decanting: 45 minutes recommended to tame reduction and open the bouquet. Drink window: 2027–2043.
