Tasting note: Bright and racy, this Premier Cru offers zesty lemon and green-apple aromas layered with white-flower perfume and a saline, flinty core. On the palate it is brisk and precise—clean citrus drive, crushed stone minerality and a focused, lingering finish. Producer notes: From Domaine Clotilde Davenne, a house known for precise, terroir-expressive Chablis; their wines favour freshness and mineral clarity. Winemaking notes: Fermented in temperature-controlled vessels with portions matured on fine lees in large, neutral vessels for texture. Minimal new wood, gentle élevage and light lees stirring preserve vibrancy and clarity. Vineyard notes: Sourced from the Premier Cru Vau de Vey site: shallow, limestone-rich soils giving sharp minerality, cool nights and modest yields that concentrate flavors. Drink well-chilled; serve with seafood or lighter, creamy dishes.
