Tasting note

Bright and precise, this Vieilles Vignes from Chablis opens with lively citrus—lemon zest and green apple—framed by white flowers and a distinct flinty note. The palate is driven by racy acidity and a chalky, mineral core that speaks clearly of Kimmeridgian soils; concentrated yet elegant thanks to older vines that give depth without heaviness. Fermentation and élevage emphasize purity: gentle handling, cool fermentation and ageing on fine lees to add texture while preserving freshness. Expect a saline, almost sea-spray finish that lingers, making it a superb partner for shellfish and subtly flavoured dishes. Drink young to enjoy its vibrant tension, or cellar a few years for a touch more roundness and complexity.
