Tasting Note: Deep ruby in the glass with an expressive nose of ripe black cherry and blackcurrant, layered with garrigue herbs, cracked black pepper and a hint of leather. The palate is rich and concentrated: generous dark fruit wrapped in savory herbal tones, firm but ripe tannins and lively acidity that keep the wine focused. The finish is long, spicy and warming. Producer Notes: A collaboration bearing the names of Anne Gros & Jean‑Paul Tollot, this Minervois bottling aims to combine close attention to detail with the robust character of Languedoc terroir. Small-lot selection and careful blending result in a wine built for both early enjoyment and medium-term cellaring. Winemaking Notes: Fermentation was handled with attention to extraction and temperature control to preserve varietal intensity and freshness. The wine was matured to integrate structure and spice — a combination of neutral vessels and time in oak (used and/or French barrels) helps round tannins without overwhelming fruit. Vineyard Notes: Sourced from Minervois parcels influenced by Mediterranean sun and garrigue shrubs, the vineyards sit on stony, well-draining soils that encourage concentrated fruit and savory, mineral-driven aromas. Low to moderate yields and attentive canopy work promote ripeness with balanced acidity. Serve: Decant for about 45 minutes before serving.
