Tasting note: This 2023 Aux Allots shows a classic Nuits-Saint-Georges profile — bright red fruit (wild cherry, raspberry) lifted by rose petal and a thread of spice, then edged by forest-floor and mineral notes. The palate is medium-plus, with lively acidity and silky, fine-grained tannins that give a poised, savory finish. Producer notes: From the respected Bertrand Machard De Gramont estate, this cuvée comes from the Aux Allots climat on the Côte de Nuits. The domaine works parcel by parcel to express the site’s limestone-infused soils and cool-climate clarity. Winemaking notes: Hand-harvested fruit is fermented with careful extraction to preserve aromatic lift; ageing takes place in French oak with a portion in older barrels to maintain freshness and terroir expression. The approach is restrained—supportive oak, gentle lees work and a focus on balance over overt ripeness. Vineyard notes: Aux Allots sits on mid-slope parcels where clay-limestone soils and good drainage yield concentrated grapes at modest yields. Vine age, aspect and cool nights help retain acidity and deliver the region’s characteristic mineral thread. Cellaring: While approachable now after a short decant, this wine has potential to develop in bottle over the next decade (drinking window c.2028–2036).
