Tasting note

Plénitude 2 是 Dom Pérignon 的第二個高峰期,經過長時間瓶內陳年與細膩的酵母接觸,風格更為深邃且充滿活力。2008 年份香氣先是花香:茉莉、薰衣草與橙花,隨後流露檸檬皮、乾蘋果與青檸的果香;中段有如烤麵包皮的奶油酵香,還混合出貝殼般的鹹礦物與微妙的鮮味。口感上屬中至偏飽滿,酸度挺拔、氣泡細緻、結構扎實,收尾長而澄澈,帶鹹度與礦感。酒莊以傳統法釀造,酒泥長時間陳放(接近十五年),近期補瓶後低劑量保留了清新感與陳年香氣的平衡。配餐方面非常適合海鮮、奶油風味或帶鮮味的料理。輕鬆打開、等半小時讓香氣舒展,就是享受這款 P2 的最佳方式。

Plénitude 2 is Dom Pérignon’s second life — a stage where extended time on the lees evolves the wine into a denser, more radiant expression. The 2008 P2 opens with perfumed florals of jasmine, lavender and orange blossom, then moves into citrus peel, dried apple and lime. Secondary notes of toasted brioche, savory oyster shell and gentle umami add complexity. On the palate it is medium‑to‑full with an incisive, chalky acidity, a creamy yet lively mousse and an expansive, saline finish that lingers. Produced by the house’s traditional method and aged nearly 15 years sur lattes before disgorgement, this bottling shows amplified depth, precision and longevity. Low dosage (around 4–5 g/L in recent disgorgements) preserves freshness while allowing tertiary development. Best enjoyed chilled, after a short decant to loosen the aromatics, and paired with refined shellfish or aged soft cheeses.

Born as an idea of harmony and longevity, the house pursues a philosophy of cellar evolution through staged releases called Plénitudes. P2 (Plénitude 2) bottles are released after extended lees ageing to reveal greater breadth, intensity and aging potential. The wines are crafted from selected parcels in Champagne, vinified and blended with strict attention to balance, then matured sur lattes for well beyond standard timelines to unlock tertiary complexity.
