Tasting note

2000 Château Mouton Rothschild is a quintessential Pauillac with depth and polish. The colour shows early evolution with a brick-tinged rim; the complex nose unfurls stewed and black fruit, tobacco, leather, clove and a peppery lift alongside coffee and mineral notes. On the palate the attack is fresh, with vibrant, acidulated berry fruit balanced against a creamy, precise tannic structure and a mineral thread. A generous yet focused wine, it spent 18 months in 100% new French oak and was harvested between 22 September and 6 October. Dense plantings on the gravelly Plateau de Mouton, old vines and meticulous cellar work give real ageing backbone and a long, fruity finish—best given an hour to an hour and a half of airing before serving.
