侍酒師私房筆記:倒出來先聞到黑果、李子和一抹煙燻,帶點乾花和香料調。入口飽滿、果汁感強,但單寧細緻有支撐,酸度把口腔洗得乾淨,尾段有橡木烤香和礦物收束。醒一個小時會更圓潤;想慶祝就配烤鴨或牛扒,朋友來喝也不失面子。

田地與釀造:酒莊由 Stephan von Neipperg 擁有,葡萄園約 90 公頃,平均樹齡 28 年,坐落黏土-石灰岩地帶。全部手工採摘入小箱,收穫後先後分級篩選,利用重力導入木和混凝土桶發酵(25–30 天),採用氣壓式下帽提取。完成乳酸發酵後在細澱澱泥上以法國橡木桶陳年 15–18 個月(新桶佔比上限約 50%),視年份必要時做細致澄清與過濾,軟木塞封瓶。

Sommelier's Note: On the nose dark berries, smoked plum and a hint of dried flowers rise from the glass. The palate is full and juicy, supported by polished tannins and a firm acidity that keeps the wine lively. Oak spice and mineral notes thread through a long, savory finish—great now with an hour of decanting, and will reward a few more years in bottle.

Winemaking & Vineyard: Owned by Stephan von Neipperg, Chateau d'Aiguilhe farms clay-limestone soils with average vine age around 28 years. Grapes are hand-harvested into small crates, rigorously sorted, moved by gravity into vats (no crushing), fermented 25–30 days in temperature-controlled wood and concrete, with extraction by pneumatic pigeage. Malolactic fermentation and ageing on fine lees for 15–18 months in French oak (up to 50% new).
