品飲筆記：打開酒瓶，先是成熟李子與紅櫻桃的果香，隨之浮現些許乾花與礦物氣息，法國橡木的雪松與溫和香料輔佐其後。口感圓潤順滑，中段帶有柔和奶油感與細緻單寧，尾韻礦感明顯且悠長。 酒莊與葡萄園：Croix Canon 作為酒莊的二號酒，來自環繞小禮拜堂的 11 公頃坡地。葡萄園面向多爾多涅河，坡度讓葡萄承受適度乾旱壓力，促進緩慢而均衡的成熟；平均樹齡約 35 年，團隊以地塊管理精細掌控產量與品質。 釀造工藝：從人工分選到重力流酒窖的輕柔搬運，每一步都以保留果味與結構為目標。酒液在法國橡木桶中陳釀 18 個月，少量新桶帶來香氣與骨架但不蓋過果實鮮明度。這款酒即飲可得，短中期陳放則更見層次。

Tasting Note: A refined Saint-Émilion second wine that opens with a lift of ripe plum and red cherry, touched by dried floral aromas and a cool mineral thread. Cedar, gentle spice and a measured overlay of French oak support the fruit without overwhelming it. On the palate it is silky and medium-to-full-bodied, with polished, well-woven tannins and a creamy mid-palate leading into a long, chalky finish. Producer & Vineyard: Croix Canon is the estate’s carefully managed second wine, produced from 11 hectares surrounding the chapel on a gentle slope that descends toward the Dordogne. The hillside site induces moderate water stress, promoting slow, even ripening; vines average around 35 years and yields are handled plot-by-plot to preserve balance. Winemaking & Ageing: Meticulous plot selection, hand sorting and a gravity-flow cellar ensure gentle handling from vine to vat. Fermentation and élevage emphasize freshness and aromatic clarity; the wine spends 18 months in French oak barrels with a small proportion of new wood to maintain fruit purity while adding structure and spice. Drinking Window: approachable now but will reward short- to medium-term cellar ageing.
