品飲筆記:2015 豐年香檳散發烤麵包皮與奶油酥感,伴隨檸檬皮、白桃與熱帶果香,微妙的香料與蜂蜜香點綴其中。氣泡細緻,口感圓潤又有彈性,酸度提亮整體結構,尾韻帶出粉質礦感與清爽鹹味,悠長且令人垂涎。 酒莊與釀造:堡林爵自豪保留傳統釀造工藝,這支年份酒全數在小型舊橡木桶中發酵,並經長時間酒泥陳年;每瓶均以人工轉瓶及手工除渣與補塞,輕微橡木與酵母香塑造出豐富層次而非霸道口感。糖度為 Brut(約 8 g/L),氣泡採傳統瓶內二次發酵法。 葡萄園與風土:來自酒莊精選園塊,2015 年份溫暖豐厚,果實成熟度高但保持良好酸度;香檳獨有的白堊或粉質礦物土壤讓酒帶有那種清爽、緊湊的礦質感,既可當即飲用,也適合陳放。 飲用建議:冷藏後直接醒 10–15 分鐘即可釋放香氣;搭配海鮮、龍蝦、天婦羅、成熟乳酪或帶奶油的甜點都非常合拍。
Tasting Note: La Grande Année 2015 opens with a rich, complex bouquet of toasted brioche, lemon and citrus zest, ripe stone fruits and roasted pineapple, threaded with warm spice and gentle honeyed notes. The palate is creamy and energetic: fine, persistent mousse lifts ripe pear and citrus rind while toasted almonds and subtle oak add depth. Chalky minerality and a saline, mouthwatering finish give it impressive length. Producer & Winemaking: This is Bollinger’s signature vintage expression, vinified exclusively in small, aged oak barrels and matured extensively on lees. Traditional method bottle-fermentation, light oak influence and hand riddling/disgorgement preserve finesse while building texture and complexity. Dosage: Brut (approx. 8 g/L RS). Vineyard Notes: Sourced from carefully selected parcels across the House’s best sites that captured the warmth and ripeness of the 2015 growing season. The result is a concentrated yet balanced Champagne with the structure to age gracefully. Serve & Cellaring: Drink now through 2045 as suggested; serve well chilled. Brief decanting (about 15 minutes) in a wide vessel can open aromatic layers, though serving straight from the bottle at 8–10°C showcases the mousse and freshness. Food Pairing: Ideal with shellfish and lobster, refined tempura, soft cheeses like Comté, delicate starters, and lightly sauced white meats. Also a lovely foil for creamy desserts such as panna cotta.
