A lively, precise Extra Brut from Champagne Vincent Bliard, Sylve opens with bright stone and orchard fruits—peach and pear—lifted by wild strawberry and a delicate white-chocolate note. Autolytic aromas of brioche and orange peel speak to careful lees aging; the palate is creamy yet energetic, carried by fine persistent bubbles and a zesty, saline lift. This non-vintage cuvée is built on a 2014 base with about 5% reserve wines and crafted by traditional method with very low dosage for a pure, terroir-driven expression. Ideal chilled straight from the fridge, it needs no decanting and pairs superbly with shellfish, light starters and soft cheeses.
