張裕黃金冰谷金鑽冰酒2023帶來濃郁但不膩的甜感:先是蜂蜜與杏桃的香氣,接著有水蜜桃、柑橘果醬與焦糖的層次,口感像蜜漿般滑順。甜度非常豐富,但清爽的酸度一路撐住結構,尾韻悠長且有光澤。酒莊強調自然冰凍採收,人工分選後低溫壓榨,盡量保留果實的純粹與香氣;釀造時採用低溫慢發酵、溫和處理,讓甜味與酸度融合得更細緻。葡萄園位於東北寒冷冰雪帶,冬季穩定的冰凍條件是濃縮風味的關鍵。建議冰鎮後略為醒15分鐘,搭配鵝肝、藍紋起司或以杏桃、柑橘為主的甜點都十分對味。


A luscious, opulent icewine from Changyu’s Golden Ice Valley project, the 2023 Golden Diamond displays an immediate bouquet of honeyed apricot, ripe peach and citrus marmalade, layered with warm caramel and dried tropical fruit. The palate is decadently sweet yet kept lively by crisp, persistent acidity, offering a nectar-like mouthfeel and a long, polished finish. Producer notes emphasize hand-harvested, naturally frozen fruit and careful cold-temperature pressing to preserve purity and aromatic intensity. Winemaking focuses on minimal intervention: slow, cool fermentation to retain primary fruit and volatile aromatics, followed by gentle aging to integrate sweetness and acidity. The vineyards sit in cold-climate sites selected for consistent winter freezes, where late-season harvesting on frozen vines concentrates sugars and flavors. Serve chilled, give a short 10–20 minute breathe to reveal the full aromatic spectrum. Ideal with rich foie gras, blue cheeses or elegant fruit desserts.
