This organic wine, with its deep ruby-red hue and delicate cassis and cedary oak aromas, offers a palate of fresh blackcurrant flavors with a hint of green. The structure is robust, featuring plentiful fine tannins and a fresh acidity, while the alcohol provides a warming sensation. The finish is lengthy, making this wine attractive in its austere elegance. It is recommended to decant for an hour before serving, and it pairs wonderfully with roasted lamb, grilled steak, or aged cheeses.
