A classic Pommard premier cru from Fernand & Laurent Pillot, this 2019 shows concentrated dark cherry and plum fruit framed by savory, earthy notes and subtle underbrush. The palate reveals firm yet refined tannins, lively acidity and a mineral backbone that carries layered spice, leather and cedar through a persistent finish. Producer notes indicate attentive vineyard work in Clos de Verger, with yields managed to concentrate ripeness and complexity. Vinification emphasizes gentle extraction and native-yeast fermentations followed by maturation in French oak barrels (a portion in recent oak) to integrate structure and aromatics. Best enjoyed after a short decant to open the aromatics; pairs beautifully with roasted and gamey dishes as well as mature mountain cheeses.
