Tasting note: Mature and elegant, this Premier Cru shows lifted aromas of red cherry, raspberry and crushed wild strawberry, edged by forest-floor, dried mushroom and a hint of sweet spice. The palate is refined — silky, fine-grained tannins carry concentrated red fruit, bright, persistent acidity and a cool mineral thread through a long, slightly savory finish. Producer notes: From the small family holdings of Jacques Cacheux in Vosne‑Romanee, Aux Brûlées is a warm, well‑drained site that produces concentrated, terroir‑driven wines. The domaine works with low yields and attentive vineyard management to express site character. Winemaking notes: Grapes are hand‑harvested and carefully sorted. Fermentation follows traditional Burgundian practice with gentle extraction to preserve finesse; the wine is matured in French oak barrels with a portion of new wood to add structure while keeping fruit purity. Vineyard notes: Aux Brûlées is a Premier Cru lieu‑dit on stony, limestone‑rich slopes with good drainage and a warm mesoclimate. Soils impart mineral lift and focused structure, while the exposure helps achieve ripe, yet tense fruit. Service & cellar: Best enjoyed with a short decant (about 30–60 minutes) to open the aromatics; serve at around 16–18°C.
