品飲筆記:這款產自馬拉諾山谷的經典酒款,酒色明亮,先是櫻桃與黑莓的果香躍出,接著帶有紫羅蘭的花香和溫和香料(黑胡椒、肉豆蔻、薑)的氣息。口感乾爽、酸度活潑,單寧細緻但給人結構感,餘韻鮮明且持久。酒莊與田地:Collezione Pruviniano 為突顯馬拉諾(Marano)山谷風土而作,酒莊隸屬 Cantina Valpolicella Negrar,重視地塊特色與傳統栽培。葡萄園位於 Prognol 的乾燥梯田,海拔約200–250米,朝向東南至西南,土壤以粉質黏土為主,局部帶鈣質,行距與株距密度高,植株平均約15年,產量控制良好以求風味濃縮。釀造與陳年:葡萄全手工採收,去梗破皮後於25–28°C發酵,浸皮約10天並每日短時下帽三次,完成乳酸發酵與自然穩定,先於鋼槽陳放(生產資料亦標示有橡木成熟),再裝瓶出貨。口感建議:建議醒酒約45分鐘,會讓香氣更開放;適合搭配烤鴨、中式燒臘、烤牛排或風乾臘腸與硬質起司,口感襯托得很好。


Tasting Note: Bright ruby red with a lively core, this Valpolicella Classico Superiore opens with ripe cherry and blackcurrant fruit, lifted by floral violet and a whisper of spice—black pepper, nutmeg and ginger. On the palate it shows brisk, fresh acidity, dry, with fine, well-integrated tannins and a persistent, savoury finish. Producer Notes: The Pruviniano Collection spotlights grapes from the Marano valley in the historic Valpolicella Classica. The project celebrates terroir: cooler terraces, traditional exposures and long local viticultural know-how. Owned by Cantina Valpolicella Negrar, Domini Veneti focuses on wines that reflect place and balance. Winemaking Notes: Grapes are hand-harvested from September into early October, then destemmed and crushed. Fermentation is carried out at 25–28°C with a ten-day maceration, including regular punching-down (three short punch-downs daily). Complete malolactic fermentation and natural stabilization follow; the wine is aged in steel (with subtle oak influence noted in maturation descriptions) before bottling. Vineyard Notes: Vines are planted on dry terraces in the hamlet of Prognol at 200–250 m altitude with southeast–southwest exposures. Soils are silty-clayey, sometimes calcareous; vineyards are grassed and trained both espalier and Veronese pergoletta. Producing vines average around 15 years old, with planting densities of 3,300–5,000 vines/ha and yields kept low (~20 hl/ha) to concentrate flavour. Serving Suggestion: Best served slightly below room temperature after a 30–60 minute decant to allow the spice and floral notes to lift. Pairs wonderfully with roast duck, grilled steaks and aged cheeses.
