品飲筆記:酒色石榴紅透亮,聞得到淡雅的紫羅蘭與紅色果實香氣,伴隨細緻香料、雪松與一絲林間泥土氣息。口感滑順,果味集中而有層次,單寧緊緻但不粗糙,酸度明快,餘韻悠長且帶有些許甘草與松露的輕輕尾韻。 酒莊與年份:佳樂酒莊只在優良年份限量推出此酒款,2018 年冬季降雪與春季降雨豐富,為葡萄提供充足水分;接著炎熱乾燥的夏季與九月的晝夜溫差造就均衡成熟與香氣發展。建議在醒酒後慢慢享用,也適合窖藏以讓香氣更細緻。 釀造工藝:在55hl 橡木大桶中以溫和的淋帽法發酵17–18天(27–30°C),完成後在桶中進行乳酸發酵,之後至少陳釀兩年,平均約18個月於中型橡木桶中熟成,再回瓶細化,追求結構與絲綢般口感的平衡。 葡萄園環境:來自含鈣鎂豐富、呈藍灰色的石灰質黏土,養分不多但微量元素充足,有助於形成優雅的香氣與紮實但精緻的單寧。 品飲建議:若即刻飲用建議醒酒一小時左右,搭配烤羊、野味或松露、奶香濃郁的義式料理最對味。這是一款既有力量也有優雅的酒,適合慢慢品味。
Tasting Note: Garnet-red with bright edges, the nose opens to aristocratic florals and red-berry compote wrapped in cedar, warm spice and an earthy forest-floor thread. The palate is elegant and layered — silk-like texture meets taut, close-grained tannins and lively acidity, delivering concentrated red fruit, star anise and subtle truffle towards a long, persistent finish. Producer & Vintage Notes: Produced only in outstanding years in limited quantities, the 2018 vintage benefited from abundant winter rains followed by a hot, dry summer. Careful green thinning (30–35%) ensured balanced ripening and concentrated aromas. Drinking window is commonly cited from the early 2020s through the late 2020s/2030s depending on cellar conditions. Winemaking & Ageing: Fermented over 17–18 days on skins in 55hl oak vats with a gentle “shower” cap-wetting system at 27–30°C, followed by malolactic fermentation in vat. The wine spends a minimum of two years ageing, with about 18 months in average-sized oak casks before bottle refinement, producing a wine that combines structure with silkiness. Vineyard: The Asili cru sits on blue-grey calcareous marl with a basic pH, modest clay content and low organic matter but rich in magnesium and calcium — soils that favor intense aromatic lift and fine tannic structure. Serving: Decant for 60–90 minutes if drinking now. Pairs wonderfully with roast lamb, game, rich pasta dishes and aged cheeses.
