On the nose: rosewood, dried florals and cedar with threads of macerated cherry. On the palate: firm, tightly woven tannins cradle black-cherry core, wild thyme and a lick of licorice; a savory, almost leathery thread carries through to a long, mineral finish. Best after a good decant — it opens from tight and linear to richly layered.

Hand-harvested fruit from Cannubi’s mix of Tortonian and Helvetian calcareous marl with over 30% sand. Fermented ~20 days in 55hl oak vats with soft cap wetting, followed by malolactic in vat and two years’ ageing in oak casks, then refinement in bottle.
