Tasting Note: Deep ruby with purple edges, this Minervois opens with an inviting bouquet of blackberry, dark cherry and Mediterranean garrigue, layered with black pepper, warm spice and a hint of leather. On the palate it’s full-bodied and concentrated: ripe dark fruit drives the core while chewy but polished tannins and balanced acidity give structure and lift. The finish is long, with savoury mineral echoes and a touch of dark chocolate. Producer & Vineyard: Domaine Anne Gros & Jean‑Paul Tollot craft wines rooted in Minervois terroir — vines grown on limestone and clay soils that bring both savoury minerality and sun‑ripened fruit. The team focuses on careful vineyard management, low yields and selective picking to concentrate flavours. Winemaking: Fermentation in temperature-controlled vats with gentle extraction preserves fruit purity while building texture. The wine sees time in a mix of neutral and lightly toasted oak to round tannins and add warm spice notes without overwhelming the fruit. Bottled after a period of élevage to integrate structure and aromatics. Serving: Best opened and decanted for 45–60 minutes if drinking now; shows well through the drinking window 2023–2031. Serve at 16–18°C with rich, grilled or braised dishes.
