品飲筆記：酒杯中呈現明亮的石榴紅，前段奔放紅莓、櫻桃與淡雅玫瑰香，繼而透出一抹礦感與溫和香料。口感滑順細緻，單寧柔和不生硬，酸度帶動整體結構，紅果中段漸轉為李子與泥土氣息，收尾優雅且餘韻悠長。 酒莊與田地：尼古拉‧丁羅西諾在沃爾奈一帶經營家族酒莊，注重呈現產地個性而非過度干預。田戴爾彼（Taillepieds）位於東南向的石灰岩坡地，土壤排水良好，葡萄樹齡偏高，產量控制下培養出濃縮且貼地的風味。 釀造小記：以人工採收、嚴格篩選上果，發酵採溫控與溫和浸皮，目的是萃取細緻單寧與香氣。陳年使用法國橡木桶（部分新桶但比例適中），強調支持果味與結構，而非掩蓋產地性。 建議喝法：略偏涼飲用（約15–17°C），現在飲可醒45–60分鐘，適合搭配燒鴨、野味或有醬汁的家常紅肉，也很適合慢慢醒來細細品味或短期收藏。

Tasting note: Bright garnet in the glass, this Volnay Premier Cru opens with a perfume of wild red cherry, raspberry and lifted rose petal, followed by subtle spice and a cool mineral thread. On the palate the wine is silkily textured—fine-grained tannins frame lively acidity and a core of red fruit that drifts into darker plum and earth notes on the mid-palate. The finish is refined and persistent, leaving floral and mineral echoes. Producer notes: From Domaine Nicolas Rossignol, a modest family domaine in Volnay dedicated to expressing site character rather than overt oak or manipulation. The Taille Pieds bottling is shaped to reflect the finesse of this premier cru, favouring precision and purity. Winemaking: Hand-harvested fruit is carefully sorted, fermented in small tanks with attention to gentle extraction and temperature control. The wine sees élevage in French oak barrels, a portion of which is younger wood to support structure while preserving the vineyard's freshness. Vineyard: Taille Pieds sits on east/southeast-facing slopes with limestone-rich soils and good drainage—conditions that give the wine its lift and mineral tension. Yields are modest, and vine age averages toward the older side for concentrated, site-driven fruit. Serve slightly cool for red (around 15–17°C) and decant for 45–60 minutes if drinking now. Drinks well through its recommended window (2025–2035).
