Tasting note

這支啤酒像是在野餐籃裡跳舞：鮮明的酸感先衝上來，櫻桃與草莓的果香很直接，帶點玫瑰花瓣的細緻香氣，還有溫和的野酵母（Brett）所帶出的泥土感與輕微木質。口感爽脆、乳酸發酵的酸味主導節奏，酒體偏輕但香氣層次豐富。釀造上以麥芽、啤酒花與乳酸菌先行，接著以Brett發酵增添風味，最後添加大量酸櫻桃並以短期橡木接觸提香。釀酒廠背景以手工與野性發酵見長，他們常與果園合作挑選成熟度高、風味集中的櫻桃，田地土壤和採收時機都會影響最終的果酸與香氣。建議低溫(6–8°C)杯飲，輕輕倒出並讓酒呼吸約十分鐘，果香與酸度會更均衡，搭配帶點油脂的料理或酸甜甜點特別對味。

Bright, playful and kettle-soured with Brett influence, this Brett Cherry Sour opens on a fragrant mix of fresh cherry and strawberry, with rose-like florals and a gentle, earthy funk. On the palate it’s tart and lively — lactic acidity carries the fruit while soft oak and a whisper of brettanomyces add complexity. Low bitterness (IBU 5) and moderate alcohol (6.5%) make it easy-drinking but layered. Producer notes indicate a mash of malts and a souring regime with lactobacillus and Brett yeast, finished with real sour cherry additions and brief oak contact to lift the aromatics. Awarded Gold at the Asia Beer Championship 2024 (Wild Beer category). Serve well-chilled in a tulip or goblet; pour gently and let it breathe for about 10 minutes to open the aromatics.
