Tasting note

The 1987 Pavillon Blanc du Chateau Margaux is a testament to the resilience and finesse of white Bordeaux wines, even in challenging vintages. This particular year was marked by unsettled weather, but the white wines shone through, especially this Sauvignon Blanc, which was harvested before the October rains. With a light yet fine profile, it offers a buttery complexity that has matured beautifully over the years. The winemaking process involved fermentation in oak barrels, followed by 6 to 8 months of aging, also in oak, which imparts a subtle, integrated woodiness to the wine. The vineyard, a historic plot at the estate, is dedicated solely to Sauvignon Blanc, ensuring a focused expression of the varietal. Enjoy this vintage now, as it has reached its peak expression.
