Tasting note

品飲筆記:酒液呈深寶石紅,初聞是黑莓、黑櫻桃與李子等深色果香,接著有雪松、菸草與溫暖的香草、烘烤香氣。入口飽滿,果實濃郁但被紮實的單寧框住,酸度適中讓整體保持活力,尾韻悠長帶些香料與微微烘木味。 酒莊與田間:龍諭酒莊重視田間管理與人工精選,2020 年產霜期與日夜溫差有助於風味累積,土壤排水良好,控制產量以換取更集中果香與結構。 釀造工藝:果實冷浸、溫控發酵以萃取色澤與單寧,完成乳酸發酵後以新舊橡木桶混合陳釀數月,讓單寧圓潤、複雜香氣融合。整體風格兼具現代感與陳年潛力。 口感提示:口中質地結實有嚼勁,單寧明顯但不粗糙,收尾帶些煙燻與香料,適合搭配風味濃郁的烤肉、燉菜或熟成起司。建議醒酒一小時左右再飲用,風味更開放。

Tasting note: Deep garnet in the glass with an immediate lift of blackcurrant, ripe plum and black cherry, layered with cedar, tobacco leaf and warm vanilla from oak. The palate is full-bodied and concentrated—ripe dark fruit framed by firm, grainy tannins and balanced acidity that keeps the wine lively. Toasty oak and a hint of spice linger through a long, structured finish. Producer notes: Crafted by Longyu (龍諭) estate, this 2020 bottling reflects a modern, hands-on approach: careful canopy management in the vineyard and selective hand-harvest ensure healthy, ripe fruit at picking. The estate focuses on balance and ageability while employing contemporary cellar practices. Winemaking: Fermentation in temperature-controlled stainless steel with extended maceration to extract colour and structure; malolactic conversion completed in tank. The wine received oak ageing in a mix of new and used French and American barrels for several months to integrate tannin and add spice/vanilla nuances before bottling. Vineyard notes: Vines are planted on well-drained soils with good diurnal temperature range, encouraging ripe phenolics and retained acidity. Yields were managed to concentrate flavours, producing grapes with defined varietal character and structural backbone. Serve slightly cool from cellar temperature after decanting (60–90 minutes) and pair with grilled, roasted or richly sauced dishes.
