老酒尋寶:為何狀態比Label更重要?

最近我哋醉啱Kings拍咗條片,講到好多酒友貪平買舊酒,結果開出嚟變咗醋。其實,買老年份紅酒,最重要係「狀態」!一支酒喺酒莊恆溫恆濕直出(Ex-Château),同喺街邊舖頭擺咗十幾年,狀態可以天淵之別。

Recently we at Kings Wine Cellar shared a video warning: hunting for cheap aged wine often leads to vinegar. The key is condition. A bottle stored perfectly at the château (Ex-Château) versus one that languished in unknown conditions—the difference is night and day.

Ex-Château 的故事:1994 Château Pichon Longueville Comtesse de Lalande

我哋手上呢支1994年嘅Pichon Comtesse,就係典型Ex-Château。由1994年釀好之後,一直喺酒莊酒窖沉睡,直至2025年我哋直接由酒莊運到香港倉庫。市面平價嗰啲?來源不明,溫度濕度都唔知,開出嚟結構散晒。相反,呢支Ex-Château仲係「硬淨」——單寧紮實,果味純淨,陳年潛力依然。

This 1994 Pichon Comtesse is a textbook Ex-Château. After vinification, it rested in the château's cellars until 2025, when we shipped it directly to our Kings Wine Cellar warehouse. Compare that to cheap bottles on the market—no provenance, unknown storage. This one? Structure intact, tannins firm, fruit pure. Still has years ahead.

品酒小教室:如何判斷老酒狀態?

打開一支老酒前,可以先睇水位(ullage)——如果係頸位以下,代表可能蒸發過多。然後聞一聞有冇濕紙皮味(TCA)或醋味。最後,試一啖:如果酸度刺喉、果味消失、味道扁平,就係唔靚。但Ex-Château通常水位好、香氣集中、餘韻悠長。

Before opening an aged wine, check the ullage (fill level). If below the neck, evaporation may be an issue. Smell for cork taint (wet cardboard) or vinegar. Taste: if harsh acidity, flat fruit, short finish—bad. Ex-Château bottles usually have proper fill, concentrated aromas, and a long finish.
