侍酒師私房筆記:打開是烘烤麵包皮、深色果實與可可的第一波吸引,入口厚實但偏緊,單寧有咬感,酸度支撐讓整體不顯笨重。中段會跑出一點橄欖、煙草和礦物感,慢慢解出來的鹹香最抓人心。現在喝要醒個一到兩小時,或放入酒櫃再等幾年更好。

田地與釀造:葡萄種在面河的礫石坡,成熟度均勻;耕作傳統、不用除草劑;採收 9 月下旬手工進行,除梗後於木槽控溫發酵,浸皮約三週,分批裝桶陳年、以傳統換桶與補桶方式照料。

Winemaker & Vineyard Notes: Six generations of Barton stewardship, vines on quaternary gravel slopes overlooking the river. Grapes are hand-picked, sorted, fermented in temperature-controlled wooden vats (7–10 days), with roughly three weeks maceration. The wine is aged 16–18 months in French oak (approx. 60% new).

Sommelier's Private Notes: On the nose it opens with toasted bread, crushed black fruits and a dusting of cocoa; mid-palate shows concentrated dark berry, olive‑tapenade hints and graphite. The texture is muscular — powerful, fine-grained tannins frame a full, saline-acid backbone. Best served after a solid decant to reveal the secondary savory layers.

Occasion / Pairing: Decant 60–120 minutes and bring out for a celebratory roast at home — bone-in steak, herb-crusted lamb or a cheese board of aged cheddar and cured meats. Ideal for intimate dinners where the wine is the centrepiece.
