Tasting Note: This mature Pauillac shows a refined bouquet of red and black currant with a cool lift of menthol, cedar and tobacco. On the palate it reads medium-bodied, with sensual, supple textures, gentle drying tannins and a gravelly minerality that frames savory, earthy secondary notes. Producer & Vineyard: From a historic Fifth Growth estate revitalized in recent decades, the property farms some 81 hectares certified organic and biodynamic on classic quaternary gravel soils. Hand-harvested in small crates, the fruit reflects both provenance and care. Winemaking & Ageing: Grapes undergo manual sorting and destemming, native-yeast alcoholic fermentation with a four-week maceration and malolactic fermentation in vats. Maturation is notable for a split regime — roughly half in new French oak, a significant portion in concrete amphorae and the remainder in one-wine oak casks for 16–18 months — giving the wine a blend of spice, structure and earthy restraint. Cellaring & Service: Drinking well now within its window, it benefits from a short decant (about 30 minutes) to settle sediment and gently open aromatics. Best with red meats and aged cheeses.
