1989 Chateau Chasse-Spleen

這瓶1989忘憂堡帶著沉穩成熟的氣息:黑色果實的濃郁、煙草與咖啡豆般的橡木香交錯,還有礫石土帶出的鹹礦感。口感紮實、有嚼勁,單寧明顯且顆粒感強,入口偏向鹹香與泥土調性,收結帶些收斂的乾感。酒莊由 Bernadette Villars 與兩位女兒經營,釀造上以控溫的不鏽鋼與混凝土槽發酵,之後於橡木桶中熟成12–16個月(約四成新桶),保留了果實與礦物的平衡。葡萄園座落在 Garonne 礫石與白堊下層,土壤結構為口感帶來清晰骨架。建議醒酒約一小時,搭配烤牛排、野味或老熟起司會特別合拍。


Deep and savory, the 1989 Château Chasse-Spleen shows a layered aromatic profile of ripe black fruit, cassis and darker berry notes woven with tobacco, cedar and coffee-bean oak. On the palate it is structured and firm: medium‑to‑full bodied with grainy, persistent tannins and a savory, mineral backbone born of the gravelly soils. Producer notes: owned and run by Bernadette Villars and her daughters, the estate focuses on classic Moulis structure and restrained oak. Winemaking: vinified in stainless steel and concrete tanks with thermal regulation, then aged 12–16 months in barrels with approximately 40% new oak. Vineyard: planted on Garonne gravel over chalk with asteria, giving the wine a stony, saline mineral core. Expect a drying, powerful finish that benefits from decanting (around 60 minutes) and pairing with rich red meats or well-aged cheeses. Cork closure; serve at 16–18°C.
