品酒筆記:這支來自聖埃美隆頂級園的酒款以黑色漿果為主線,黑莓與深櫻桃的果實味鮮明,隱約有黑加侖香氣,尾段帶出肉桂、薑餅與丁香般的香料調。口感中等偏實,酸度明亮,單寧成熟有力,但不粗糙,中心口感緊湊且帶有一抹「脆感」使整體更鮮明。 生產與葡萄園:酒莊以老藤為主,採用有機耕作與低干預栽培,甚至部分地塊仍以馬耕保存土壤結構,田地多為聖埃美隆典型的石灰岩與黏土混合土壤,利於果實成熟而保留礦物與酸度。 釀造重點:這款為限量特釀,著意在平衡與陳年潛力上。酒體在橡木與果香之間取得良好協調,橡木以襯托香料與結構為主,不蓋過果味。建議醒酒一小時,能更快展現香氣與柔化單寧。 搭配建議:適合與烤羊腿、濃味牛排、野味或陳年硬質起司同桌,能把香料與果味層次襯托得更好。
Tasting Note: A focused Saint-Émilion Grand Cru with black-fruit drive—blackberry, dark cherry and cassis—lifted by warming spice notes of nutmeg, gingerbread and cloves. The palate is medium-bodied and concentrated, with bright acidity, firm yet ripe tannins and a crunchy, spicy finish. Producer Notes: A limited-edition cuvée from Chateau Coutet, made from old vines tended with traditional care; the estate works organically and has long favoured low-impact viticulture. This bottling was produced during the ownership of David Beaulieu and reflects the house’s attention to site and vine age. Winemaking Notes: Fermented and matured with a view to balance and ageing potential; the wine shows tight integration of fruit and structure, with careful use of oak to support spice and texture without dominating the fruit. The result is a composed, age-worthy wine that opens elegantly after decanting. Vineyard Notes: Sourced from old vines cultivated on classic Saint-Émilion soils—mixes of limestone and clay—worked with respect for the land. Horse-drawn ploughing and organic practices help preserve soil health and produce grapes with purity and concentration. Service: Decant for about an hour to show best aromatics and soften the tannins. Drink windows extend well into the next one to two decades.
