Tasting note

這支來自Haut-Médoc的1989年酒款，色澤深沉，香氣以成熟黑果和礦物感為主，還帶有烘烤堅果與橡木香的細緻層次。酒體飽滿、結構堅實，單寧有份量但已練出圓潤感，酸度依舊支撐整體，使口感保持活力。酒莊以人工分箱採收、使用不鏽鋼和混凝土溫控發酵槽並以自然酵母發酵，之後在法國橡木桶陳年約十八個月；釀造貼近傳統但在細節處相當講究。開瓶建議先靜置醒一小時並小心去渣，能讓煙草、皮革與森林下葉的陳年香氣慢慢展開。搭配紅肉、燒烤或成熟硬質起司都很合拍，口感表現尤其迷人。

A classic Haut-Médoc showing deep colour and a concentrated, savory profile. Aromas of ripe black fruit and mineral notes unfold into toasted-nut and cedar nuances from careful oak ageing. On the palate it is full-bodied and structured, with firm yet refined tannins and lively acidity that keep the wine fresh. Matured in oak for about 18 months and vinified using native yeasts in temperature-controlled stainless and concrete vats, this bottling rewards a gentle decant to settle any sediment and to open up tertiary aromas of tobacco, leather and forest floor. Drink with richly flavoured red meats or mature cheeses.

Château Sociando-Mallet is an independent Haut-Médoc estate known for traditional vinification and a hands-on approach in the vineyard. Grapes are hand-harvested into small crates, fermented using native yeasts in temperature-controlled stainless and concrete vats, and matured in new and seasoned French oak for over a year and a half. The estate focuses on producing long-lived, structured wines that combine ripe fruit, minerality and well-integrated oak.
