品飲筆記：酒體深沉，先是黑莓與李子果香，入口則以結實但細緻的澀感托起果味，並帶有鹹香、礦感與一抹辛香與可可尾韻。整體平衡，層次感鮮明，留香悠長。 酒莊與生產：酒款由 David Beaulieu 經營，家族歷史悠久，酒園以有機方式耕作，對土壤與產量管理非常講究。Les Demoiselles 來自園中兩塊精選地塊，特別著重成熟時機與果實品質。 釀造與陳年：分批小缸發酵，控制浸皮與提取以保留新鮮酸度與果香，之後於木桶中熟成以增加結構與香氣複雜度，但不蓋過原始果味。整體口感紮實，單寧有力而圓潤，適合當餐飲用也可陳放。 葡萄園環境：來自黏土與石灰岩交錯的田塊，排水與晝夜溫差幫助果實累積香氣與良好酸度。低產量與細緻的園務使這瓶酒在口感和陳年潛力上都有不俗表現。

Tasting note: Deep, polished black-fruit aromas lead into a palate of concentrated plum and black cherry, framed by savory, dark tannins and a backbone of fine acidity. There's a mineral lift and a hint of cocoa and spice on the finish—balanced and built to age. Producer notes: In the hands of David Beaulieu, this cuvée comes from two selected parcels within the estate. The property has been in the family for generations and farms organically, producing wines of classic Saint-Émilion character and ageing potential. Winemaking notes: Carefully vinified in small lots with controlled extraction to preserve freshness, the wine spends time maturing in oak to add structure and subtle spice without overwhelming fruit. The result is a focused, layered wine with the texture and tannic framework to evolve in bottle. Vineyard notes: Sourced from clay–limestone parcels on the estate, the vines benefit from good drainage and diurnal temperature variation. Low yields and attentive canopy management concentrate flavors and produce firm, age-worthy tannins.
