酒色明亮金黃，香氣迎面是清新的針葉、羅勒與青蘋果，帶點潮土與草本層次。入口薄荷與梨子的果甜明顯，橡木輕托中段，尾韻則轉為綠茶與淡淡煙薰，口感乾爽且縱深分明。白州位於南阿爾卑斯山腳，四季分明、環繞著原始林地與清冽山泉，這樣的山林環境與水源是成就其「綠意清新」風格的靈魂。釀造上以地方法水源蒸餾，入橡木桶熟成，酒體平衡、層次細緻；建議倒入杯中稍候約10分鐘或加一點水，能把果香與草本香打開，無論慢飲或配餐都很迷人。

Tasting note: Bright champagne-gold in the glass. The nose opens with fresh basil, pine needles and green apple, followed by damp earth and a light herbal complexity. On the palate it shows sweet pear, mint and kiwi framed by a silky oak-tinged midpalate; gentle peat and green tea notes persist on a long, refreshing finish. Producer notes: Crafted at Hakushu, nestled in the forests around Mt. Kaikomagatake, this expression celebrates the distillery’s ‘green and fresh’ character born of high-altitude seasons and pristine mountain water. Winemaking/distilling notes: A single malt matured in oak casks, Hakushu 12 combines careful distillation with temperate mountain maturation to produce crisp herbal tones alongside subtle smoke. Bottled at 43% ABV with a T-top cork, it rewards a short rest in the glass (about 10 minutes) or a splash of water to unveil layered aromatics.
